Pitchounet cheese Soufflé

Ingredients (for 4 people) :
- 100 g of Pitchounet cheese
- 4 eggs
- 1/4 liter of milk
- 50 g of butter
- 40 g of flour
- salt, pepper and nutmeg


Grate the Pitchounet cheese.
Heat the butter in a saucepan and add the flour. Stir and and little by little the milk.
Add a pinch of salt, pepper and nutmeg.

Take the saucepan off the heat and blend the yolk and three whipped eggs white.
In the meantime add the grated cheese.

Butter a soufflé tin and pour the mixing into it. Put in the oven for 20 min at 410°F.
Do not open the oven while the soufflé is cooking, it may flatten.
Serve as soon as it is cooked.
